The marriage of genuine lambic, to the cherry – originally the Schaerbeek cherry – always has surprising results, particularly as a spontaneously fermented young lambic is added to the old lambic in the proportion of one to three. This union, in which natural bitterness dominates, will delight genuine connoisseurs of spontaneous fermentation and will surprise newcomers to fruit beers in their most prestigious and noble form.
