With a tart, but not overly piercing, sourness. Conditioned on Dragonfruit.
Our FIRST SOUR BEER! A Berliner Weisse, conditioned on Dragonfruit, we got her down to 4.7pH prior to boil, then let it sit on Lactobacillus Plantatarum in the kettle for 35 hours, dropping all the way down to 3.33pH for a tart, but not overly piercing, sourness.
Yes, the name is hat tip to Something Corporate and Andrew McMahon in the Wilderness, and rightfully so, we will be donating a portion of the proceeds to the Dear Jack Foundation as a “thank you” for not being buttheads (they’re actually super cool) about the connection (even though our Lawyers said it was OK either way).
