Beer Description
Our Historical Grisette. This beer is a crushable 4.1% ABV Saison mixed culture including Brettanomyces isolated from Brouwerij Boon Vat 110 by Sidereal Labs. Cans and kegs are both naturally conditioned.This is as close to a historically accurate version of the style we could produce. The beer is mashed on a bed of hay, and fermented/aged in French Oak Puncheons. We taste incredibly smooth, muted saison phenolics with background notes of hay, fruity Brettanomyces esters and wildflower honey.A special thanks to Dave Janssen for putting in the research that led to this beer.
