Beer Description

Alcibiades III

Imperial India Pale Ale 8.2% ABV
Alcibiades is a rotating series of Imperial India Pale Ales. In each variation, we utilize the same malt bill but change the dry hop varieties. We save all of the hopping for the cold side of the brewing process, which results in the largest dry hop of all of our beers to date. This third iteration was dry hopped with a substantial amount of New Zealand hops, including Nelson Sauvin™, Riwaka™, and Motueka™. Crafted with American malted barley, malted red wheat, flaked white wheat, and our house ale yeast blend, this ale is juicy, soft, and incredibly complex. We taste notes of lemon candy, orange sorbet, passion fruit gelato, and guava. It is named after Alcibiades (450 – 404 BCE), who was an Athenian statesman and general. He was known for his extravagance and debauchery, leading him to be exiled from Athens twice and from Sparta once. In fact, the famous philosopher Socrates attempted to correct Alcibiades’ behavior but was unable to do so!

German Kölsch-style Ale 4.9% ABV
Balbilla is our German Kölsch-style Ale. Crafted with German malted barley and wheat, a blend of classic and new German hops, and our favorite kölsch yeast, it is crisp, dry, and refreshing. Lagered for many weeks and naturally carbonated, we taste notes of candied lemon, blackberry, freshly baked bread, and crackers. It is named after Julia Balbilla (72 – after 130 CE), who was a Greco-Roman noblewoman and famous poet. She accompanied the emperor Hadrian on his tour of Egypt and several of her epigrams, which survive today, were inscribed on the Colossi of Memnon.

DĂĽsseldorf-style Altbier 5.6% ABV
Collaboration with Tox Brewing.

Crafted with German malted barley, specialty German malts, Adeena hops from Crosby Hops, and our favorite kölsch yeast strain, this ale is soft, crisp, and incredibly drinkable. Single-decocted, naturally carbonated, and lagered for over eight weeks, we taste notes of dark honey, bread crust, candied grapefruit, and caramel. It is named after Britannicus (41-55 CE), who was the son of the Roman Emperor Claudius and step-brother to Roman Emperor Nero. Locusta (the name of the collab brewed at Tox’s New London Brewery) famously provided the poison to Nero, which Nero used to murder Britannicus in order to secure his power.

India Pale Ale 6.5% ABV
Brutus is our flagship India Pale Ale. Crafted with American malted barley, specialty German malts, a touch of flaked oats, and our house ale yeast, it is refreshing, juicy, and soft. Hopped generously with Citra®, Simcoe®, and Mosaic®, we taste notes of orange sorbet, bubblegum, apricot, overripe mango, and candied lemon. It is named after Lucius Junius Brutus (6th century BCE), who was a famous founder of the Roman Republic after the expulsion of the last Roman king, Tarquinius Superbus.

New Zealand IPA 7.0% ABV
Cleopatra is an India Pale Ale celebrating New Zealand hops. Crafted with American malted barley and white wheat, specialty German malts, and our house ale yeast, it is juicy, delicate, and soft. It was hopped generously with a blend of four New Zealand hops, including Nelson Sauvin™ and Riwaka™. We taste notes of gummy bears, papaya, peach, and pineapple. It is named after Cleopatra (69 – 30 BCE), who was the last queen of Ptolemaic Egypt and only Ptolemaic queen to learn Egyptian. She is also known for her relationships with Julius Caesar and Marcus Antonius.

Imperial Oatmeal Stout 8.0% ABV
Commodus is our Imperial Coffee Oatmeal Stout. Crafted with American malted barley, a complex assortment of British and German specialty malts, American hops, and our favorite American ale yeast, this stout is decadent, creamy, and soft. We conditioned it on the Hidden Valley Blend of coffee beans roasted by our friends at Zero Prophet Coffee in Washington, CT, and an enormous amount of Tahitian vanilla beans. We taste notes of tiramisu, affogato, vanilla latte, and dark chocolate cake. It is named after Commodus (161 – 192 CE), who was a Roman emperor and son to Marcus Aurelius. His reign is known for marking the beginning of the downfall of the Roman Empire; he renamed Rome after himself, dressed as the god Hercules, and fought as a gladiator. Due to his behavior and misrule, he was assassinated, which led to many years of civil war.Commodus is our flagship imperial stout. Fruited Kettle Sour 7.3% ABV
Ovidius is our fruited kettle sour series brewed with a touch of lactose*. This iteration was conditioned on massive amounts of marionberry, blueberry, and cherry purĂ©e. Crafted with American malted barley, malted oats, flaked oats, American hops, milk sugar, and our favorite Lactobacillus culture, this sour is creamy, jammy, and tart. We taste notes of blueberry sorbet, cherry pie, marionberry jam, and mixed berry cobbler. It is named after Ovidius (43 BCE – 17 CE), who was a Roman poet and lived during the reign of Augustus. He is most famous for his poem Metamorphoses, which is one of the most influential poems ever written, and he wrote a great many other poems, such as Ars Amatoria (The Art of Love) and Amores (The Loves). Ovid’s collection of poems continue to influence writers, poets, and artists to this day.

Triple India Pale Ale 11.1% ABV
Queen Mitsy is the second edition of our Mitsy series, packing even more punch and flavor. For this triple IPA, we triple dry hopped it with a blend of Nelson Sauvin, Citra Cryo, and Nectaron. Thus creating a beer that is creamy, tropical, and balanced with notes of orange sorbet, papaya, guava, and gummy bears. It is named after Mitsy Mergy (2010-2023), a small yet fierce Yorkshire Terrier. Her loving spirit, bold personality, and unwavering loyalty will never be forgotten. She was the best dog a family could have.

German-style Helles 5.2% ABV
Sappho is our flagship German-style Helles lager inspired by our travels in Germany. Crafted with German malted barley, a blend of classic and new German hops, and our house lager yeast blend, this lager is soft, balanced, and complex. Single-decocted, naturally carbonated, and lagered for over eight weeks, we taste notes of bread, crackers, candied lemon, and melon. It is named after Sappho (~615 – 570 BCE), who was one of the most renowned ancient poets due to her beautiful yet concise writing style. She is primarily known for her poems on sexuality, love, and marriage. She was even regarded as the tenth muse!

Sculptura is a new series of beers where the brewers will experiment with different ingredients and brewing techniques. Each iteration can be a different style of beer or a variation on a classic Caius Farm beer. This second iteration was brewed with cryo hops of one of our favorite American varieties! We taste notes of orange sorbet, guava, and mango.

German-style Pilsner 5.4% ABV
Servilia is a German-style pilsner designed to showcase our favorite German hop, Hallertau MittelfrĂĽh. Crafted with IREKS malt from Stone Path Malt in Wareham, MA, our selected lot of Hallertau MittelfrĂĽh hops, and a new lager strain from our friends at The Yeast Bay, this pilsner is balanced, soft, and incredibly drinkeable. Double-decocted, naturally carbonated, and lagered for over eight weeks, we taste notes of melon, lemon candy, bread crust, crackers, and white tea. It is named after Servilia (100 BCE – after 42 BCE), who was the mother of the Brutus who conspired to assassinate Julius Caesar. She was also the mistress of Julius Caesar, and it is said that Caesar admired her intellect and cleverness.
