Beer Description
After primary fermentation is complete, the fermenter is dosed with 7 gallons of tart cherry juice per barrel for a secondary fermentation.
Brewed with pilsner and wheat malts, with the addition of flaked wheat and maize, this traditional saison is fermented with Brettanomyces Lambicus, a wild yeast that lends some ‘funk’ and tartness to the beer. This dry, tart saison bounds with cherry flavor throughout.
